Anyone have recommendations for day tours in LA for both a turnaround day (on a B2B) and for debark day (staying overnight).

A bit broad-- LA is so large there isn't one definitive tour. What areas of the city do you want to see? What sights interest you? Will be a lot easier to help once it gets narrowed down a bit.

Just to clarify - I am looking for tour company recommandations!

When we had a turnaround day in LA back in April, Princess offered a city tour that started and ended at the pier.  It went down sunset blvd, we had time at Grauman's, toured downtown.  It was a nice way to spend turnaround day.  Maybe your cruise offers something like this or they may have something to offer once onboard.

LA area is so vast you really need to narrow down first what types of things you are interested in. There are tons of amazing museums here, Beverly Hills, Hollywood, Downtown LA w Olvera Street, the Zoo, theme parks, etc.  If you want a general tour I would look at what they ship offers and then look for a similar tour if you really don't want to do the ship one.  Everything is so spread out here for example depending on traffic and time of day it could take a half hour  to almost two hours to get into the heart of LA from San Pedro or Long Beach.  If you have your heart set on just one or two destinations then you could always rent a car or just do uber or lyft as well to that specific spot.
