My wife and I have "free" internet as a perk.   We will each have a phone and a laptop/tablet.   Can we connect all devices?

Yes,  you can connect all your devices. You can only connect one at a time though. If you are logged in on your iPhone you have to log out to connect your tablet.

You will each have an account.  Each account connect to 1 device at a time, log off on one and you can connect to another.

Very easy to switch between devices.    Just log onto second device and it will ask you if you want to bump the other one off.

We also have this perk on our next cruise - next week!  Will we receive instructions in the paperwork left in our cabin or do we have to figure it out on our own? TIA

There is a little info card in your cabin, but it's very easy. Literally go to www.login.com on the desired device, and you will be able to create an account coupled to you personally (but it can be used by anone else onboard to whom you give the credentials). You then use this account to login if you change devices, or if the connection times out due to inactivity.

If you can't figure it out with the instructions on the card in your stateroom, go to the iPhone lounge and they will help you get signed in.
