We don’t do excursions (been there done that). Other than maybe a spa treatment, how should I use it? Can it be used in Casino? Should we try a specialty restaurant? However, you can decide if shops on board would be great for shopping for gifts for holidays or birthdays. Personally, I wouldn't even use the OBC in the spa (I really don't like their upsell tactics). Alcohol and other items in the Fun Shops on board. However, we used up our OBC by buying a few Carnival gift cards in the Cherry on Top gift shop onboard. That will consume about $200, depending on how many of you there are in your party. I will assume 2. Steakhouse: about $100. If they offer (and have slots available), Chef's table - that's another $200. Get some of the photos from Pixels? Easy to spend $100. Buy some t-shirts or other souvenirs? We had $650 in OBC for our cruise last Dec on Mardi Gras, and we blew through it all somehow, and I don't think we did the Steakhouse or Chef's Table, but we did do Rudy's Seagrill. We spent the rest on Pixels, Auto-grats, t-shirts and souvenirs (the ship model is almost $100!), and maybe a good chunk of our drink tips (we always add a bit even with Cheers).
