What are your plans for the day if your flight home isn’t until early evening?

Our flight home is not until 6:00 pm…

We will have already been in Sydney for multiple days (pre cruise)….

I am thinking we just may want to spend a day at a hotel somewhere between the cruise port and airport-

Any suggestions?

It's only a few miles from the OPT to the airport and there is not much of interest in between.

 

If you are already in Sydney, why not just get the hotel you are in to hold your luggage for you and go sightseeing until you need to head to your cruise?

If your cruise ends at Sydney Passenger Terminal and not "White Bay" there is luggage storage across the road from the port

As for doing something - walk round to the ferries buy a ticket and ride 🙂 the zoo is a good option if you havent been there and you like that kind of thing.  The ferries are often and cheap and usually run on time.

This picture shows you how close the ferries are to the cruise terminal - there was a shop front luggage storage last time I was there located at around the "g" in the word "Rydges sydney Harbour" on the map.  You can see it when you come out of the terminal building.  If you take the ferries you would walk to the green "F"s

Our flight isn’t till even later and we will have also been a week in Sydney pre-cruise.

We are planning to book an hotel day room, perfect for dumping stuff and probably just laying round the pool reminiscing about our fabulous cruise!

There are various options/times/facilities available.

Some of the best days I've ever spent, as a visiting tourist, were on the day I flew out home.  The last was in Milan.  

I visit Sydney regularly and never tire of things to do and places to see.  Just put your luggage in storage and continue your holiday would be my suggestion, depending on the weather of course.
