Because they bring me a check that says $0 and i write in an nice tip. NCL has several menus for MDR, 14 I think. They rotate them based on what's available. They always have the classics, the other things change. With specialty dining thrown in, it's not bad. As for Specialty Dining, you pay 20% gratuities when you get the package, either free at sea or purchased separately. Tipping extra is nice, but not required. We still do most times. Also, the Steak Tartare in Le Bistro is delicious, and more importantly the French Onion soup there is the best! I don’t see filet mignon on the menu so if it’s there, it’s called something else. I’m not going there to eat anything tartare.
