Just completed my 99th and 00th cruises by sailing to and from Iceland via Greenland.  Agree with you completely that driving the ring road although beautiful takes a lot of time and is fairly expensive.  i doubt if those going for 7 days matched what we saw in our 5 of 7 stops in Iceland.  Must sees:  Grundefjordur, Isafjordur, Akeryri and Reykjavik.  In each must take tours but do not have to be the expensive ships tours.  Book trips to waterfalls in each and the other sites.  In o doing saw more than those on the ring road in the smae time .  And enjoyed the quality food, shows and other benefits of "leave the sailing to us".  Would say that if only one day in the capital the golden circle tour beats the Blue Lagoon.  Although quite a treat, the waterfalls, geyser, national park and more on the golden circle are top of the chart spots.  you can see great individual comparable tourist items in US and elsewhere but set in the colorful country side of Iceland they are memories for a lifetime.  🙂
