Warm Chocolate Melting Cake

Maybe you should have called this thread "The Ode to the Cake" :)
When I started the thread six months ago, I thought I was asking a simple question... I've been amazed since then at how many responses there have been, and how many people have emailed various variations on the recipe directly to me. The thread, in fact, outlasted the relationship that it was started for!

 

In the ensuing time, I've prepared several versions of the recipe at home. The official Carnival version, which has been posted on this thread many times, does not scale down very well. It requires some tweaking of both the flour and the eggs in my experience.

 

The numerous varieties, however, of "lava cakes" that are out there and that are designed for smaller batches do an excellent job of replicating the experience that the WCMC provides on the ship.

 

Alas, I'm no longer eating anything quite that rich or sugary, but I still keep the recipes handy as it still makes a wonderful finale when cooking for a date or for parties.

I begged our maitre'd for the recipe. The one I have is autographed by the head chef on the Pride.... good luck with conversions.

For ten Portion:

375g Black Chocolate 64% (very important not to use other types of choc)

375g Butter (not margarine)

8ea Egg yolk

7ea egg whites

250g sugar

170g sifted flour

-Melt the chocolate and the butter together until 64 Celsius

-Blend the egg yolks, egg whites and the sugar together then add the butter-chocolate mixture

add the flour, using a wisk

Put it in the forms (prepare with butter and flour) and leave it for one day in the fridge

bake directly in the oven at 200celsius for 8 minutes

I have used this recipe and it is a good one. I only have the 7oz ramekins and when she says that they are just too big, she means that it is too much to eat at one time - I know......I tried and couldn't. :D

 

I use Hershey's special dark chocolate chips, and they are really good. I just bought the Dark Ghirardelli bars to try next time.

I cook my almost-full 7oz ramekins at 400F for 16 minutes. I like my middle to be pudding-like.

Warm melting chocolate cake at home!!! Did the conversions from Carnival's jumbo recipe and tried it...I think we've got it! Here's the recipe I used:

 

8 oz. dark chocolate (i used 1 1/3 C. semi-sweet choc. chips)

8 oz. butter (i used one stick salted, one unsalted)

5 eggs (room temperature)

5/8 C. sugar

2/3 C. flour

 

Melt chocolate & butter over low heat. In mixing bowl, mix eggs and sugar, then add flour. Slowly whisk into the melted chocolate mixture. Pour into greased (i used Baker's Joy) ramekins. (i tried 4 oz. & 7 oz. -- 7 oz. is just too big!) Bake at 400 F for 12-14 minutes. Yield: 36 oz. unbaked batter; 8 servings if you use a 4 oz. ramekin.

 

Adjust times according to the size ramekin you use, and the texture you prefer. In a 4 oz. ramekin for 13 min., the texture on the inside of the cake was a little heavier than pudding, kind of like a loose fudge. I also did some in my convection oven at 350F. 13 minutes in a 4 oz. ramekin yielded a smooth, hot fudge sauce-like center. In the 7 oz. size, 16 min. at 350F in the convection oven produced a pudding-like texture in the middle. Regular oven, 7 oz. size, at 400F, smooth, heavy sauce-like texture resulted after 14 min.

LOL. Right when I saw the title of this thread a big smile came to my face.

I just got off the 3/31/07 Spirit sailing, and I had this dessert every single night!!

My waiter knew each time what I wanted for dessert, and wouldn't bother asking. When he brought the plate, I would always joke with my family, saying "Wow, this looks great. Never seen it before" :p

70 lbs. Semi Sweet Chocolate

70 lbs. Butter

700 Fresh eggs

18 lbs. Sugar

25 lbs. Flour

 

Melt chocolate and butter together. Mix half egg and sugar and whisk for a few minutes, then add flour. Then add the rest of the eggs. Add egg mixture to the melted chocolate mixture and mix. Pour the mixture into the ramekin cups. Bake in oven at 200 C for 15 to 20 minutes. Sprinkles with powder sugar and server with vanilla ice cream. Makes 1000 portions

Sandiego619, I was also on that same cruise(Spirit-Mar31,2007), my first, and loved every minute of it. I had so much fun. Played Bingo and won the last jack pot! I ate that dessert 7 nights in a row! (and surprisingly didn't gain a pound!) I also enjoyed the karaoke, the Casino and the evening shows at Pharaoh's Palace. And ever night I was treated to a new Towel animal resting on my bed!

That cake is the best. Before we cruised a few weeks ago I read alot on the boards about it. I could hardly wait to try it. The first night at dinner I was so disappointed that I did not get to try it because they screwed up my dinner seating. We were supposed to be at the early seating. However they put us in the late seating. So we went to the Lido deck the first night. The second night we did have early seating and I did order it. It was soooo goood. :D

 

Can you imagine having the job to sit and break 800 eggs for this? That would be rough.:mad:

Just tried that recipe and it is WONDERFUL! no AWESOME!! maybe FABULOUS!:) :) anyway we're in "heaven" and I don't think I want to return:D

For us this will probably be the closest thing to a cruise for a while so it definitely brings back memories!!:)

Thankyou for posting this! I have tried other similar recipes and nothing has come close! It's also really simple to make too!!

aww i miss the cruise so much. Hey! i also won in bingo, i split a jackpot with someone and got 75 ;)

Lol i was at the Casino every night too, i loved the game Jacks or Better, and three card poker. I probably saw you around in the casino but didn't recognize you lol

Whats funny is when I came back from the cruise, i had lost weight. :p

When my hubby and I were on the Inspiration for our Honeymoon I had this!! I did not know the name of it though. On our last cruise we only ate in the dining room one night and they did not offer it. i have been telling my hubby that I cant wait to see if they have that again. Thank you all of the recipe and for the pics. Now I know what cake to ask for that I have been craving for 6 years!!! "drooling"

dmfriedman I saw that you posted you went on the Liberty in March 07, I was just wondering when in March? I was on the same ship in March.

 

My 2 favorite things are cruising and scrapbooking. I always take some of my stuff and crop while my son is swimming or in Camp Carnival.

I loved it and wish I had some right now. We were on the Liberty last week and I had that every night. My waiter knew I always wanted it. Sometimes I would eat that and try another dessert too.

 

I love cruising:D :D and scrapbooking.

 

I don't understand these people that say they don't like cruises.:confused:

Took thirty minutes, from prep to cook time, to make this magical treat; I tried it last night and OH MAN! I could have been back on the ship! I substituted a small amount of the chocolate chips for raspberry dark chocolate, and it added a whole new dimension! to die for....ummmmm...thanks for the recipe!

We got the Trader Joes Lava cakes. Very reasonably priced (I think). 2 for less than $3.00 in a box. Very yummy - easy in the microwave. Actually very bad to know about this as I will no longer fit in my clothes soon. :-)

Try these out - I think you'll find they taste a lot like the warm chocolate melting cake.

 

They are called "Warm Delights" and the Molten Chocolate Cake is the one that reminded me of the warm chocolate melting cake. I've tried the molten carmel cake and it's good too. There are 7 varieties, but I've only tried the two.

 

These are so easy to do - you just add water, mix and put in microwave.

Less cooking time. Try 14 minutes instead of 16. That should keep the middle softer.
