please tell me the name of the captain on the galaxy that will be sailing out of galveston on 11/01/04 etc.

Our Captain, when we sailed on 10-18 was Capt. Peppas.

I'm just back from Galaxy, our captain was Captain Peppas also. He was around the ship much more than any other Celebrity captain that I've seen. We wound up eating lunch a couple of days at the table next to him in the Oasis Restaurant & saw him several times in the Martini Bar. He wasn't overly friendly but he did seem fairly nice.
