Physically demanding excursions?

Im a 22 year old Marine that will be going on the NCL Sprit from 21-28 Dec on my Christmas leave with my family......my question is, are there any excursions in the Santo Thomas area that are somewhat physically demanding? Something that involves hiking or anything like that interest me.
