2 days, need ideas

We will be docking at 3:00 on Sunday and leaving at 12:00 Tuesday. Trying to find out ideas where we can do the most while we are there. I know we want to visit a few beaches, eat a bit, go to crystal caves and most likely mini golf. Any other ideas that we could fit in would be great, thanks for your help.
