I think different things work for different people. I'm one of those people piling up my breakfast plate because I like to eat a large protein packed breakfast because it sets me up for the day and I don't feel like eating again until lunch time. I do this at home every day and through restricting carbs and sugar (while not eliminating them altogether) have lost considerable weight. I think this will work well on the ship, particularly on port days. Rather than eating lots of sugary treats or sodas I'd prefer to eat a good quality dessert maybe once a day. Dinner tends to be smaller -that's my preference. I like to try different things but I don't need to eat a huge plate of food at each meal. I think it's important to enjoy food and not be too restrictive and that's where managing portion sizes helps - thankfully there's enough choice on a cruise to be able to pick and choose. The key for me is to be in a good routine at home before the cruise so I'm over the carb cravings before I start it (then I'm far less tempted to over indulge). It's never going to be easy though with so many wonderful options available!
