Booking ship excursions on AMA are rather relaxed. While you can book ahead of time, normally it is not too difficult to change your mind at the last minute on the day of the tour. 
 

Alcohol in your room is never a problem. But the bar is much more fun! 

We are still wearing our masks here so I don’t see any problem doing it in a foreign country.

As with all cruise ships, they like you off the ship as early as possible. No later than 9:30am on our upcoming cruise of the Douro.
