Vantage does a similar itinerary for the whole sailing season. Was your cruise the same itinerary albeit more devoted to the culinary arts?
You said you were doing Paris on your own and you traveled with the post cruise trip group there. Did Vantage take you there or did you arrange your own transportation?

Is there any documentation or table showing by date and location where the river cruise ships have been delayed/canceled/etc. because of water conditions? I would find such information helpful in planning when to travel.

I would appreciate opinions on the advantages and disadvantages in European river cruising between Grand Central Travel and Vantage.

I heard that the cabin attendants had to take a special course in oragami in order to learn how to fold the paper into the point? I also heard that because the course is so difficult many of them failed. Therefore Hurdy Gurdy who has many skills sneaks around to the cabins when you are out and makes the points. If he is busy it is done by the ship's surgeon who has also been known to be very precise in the stiches he puts in.

Sometimes a guarantee is the only choice. Last June when I booked the November 2005 Amsterdam, Singapore to San Diego the only A and similar cabins available were guarantees. And that was not too long after the cruise was announced. My TA works for a very large company and she couldn't do any better.
