We had Cheers last week while on the Pride. I agree, we looked at it as a whole - I got some lattes (which I don't normally spend the $ on at home), he had a couple of Cokes every day, we tended to get a large bottle of San Pellegrino at dinner and I had some glasses of seltzer when I didn't want a soda or anything alcoholic, bottles of water, etc. My fiance tracked everything on his phone, and when you add in the 15% gratuity that you don't see on the receipts, he said we definitely came out ahead.
Oh, and if you use the HUB app, you can see what bar & drink you had there.

You will be OFF the ship by 9am...usually much earlier. They try to have the entire ship cleared of everyone by 10am. I wouldn't pay extra for FTTF...
If you can pack lightly, you can certainly do self-carry without FTTF.
We just got off Pride yesterday. Didn't dock til 9am. We were second self carry group called. That was about 10:15.

Can you just hang out in the tasting room and try the beers or do you have to do the tour?

I did this cruise last October. We had a bumpy last day at sea. Only time I've gone north, so can't say if that's the norm or not. Never hurts to have something with you just in case.

Did the lobster one in Portland last year. Yes, was alot of food. Had a great time.

Oh, how I hope it's true the beds are being replaced! Did an 8 night in the Fall and was miserable. Heading to Bermuda in September and have been dreading the beds again.

Quick suggestion I wish I'd thought of last week - if you want some bottled waters, stockpile them in your fridge and take them to HMC. They're $1.25 on the ship but at HMC (when we couldn't use Cheers) were $1.80 something each.
