Last Minute 3 night on Victory May11th

So I just booked this yesterday and I leave in 8 days, when is the elegant night? I'm hoping no the first night as May 11th is my b day and wanted to really relax and enjoy myself. Also we will be overnighting in Nassau and even though I would be perfectly happy staying on the ship my wife will most likely want to go to the distillery and visit the fish fry for some food. whats the latest you can return to the ship do they have a cut off time?
