I would (and always on any cruise) suggest that you take US in small bills, 5.00, 10.00 20.00 bills. Us the small possible when paying for an item, as per the government you are only supposed to get change in Barbados dollars even if you pay in US. However, there are some places etc that will make change in US. but only bills. US coins are not used here at all, so don't bring those to pay. You might be a combination of change in US bills and Barbados coins. don't be confused by this just double the coins to get the right us amount.
