Roots, Belize , and Cozumel

We are going on a cruise with some family members and I really want them to have a great time but there are some issues. Two of them are poor swimmers and are afraid to get in the water and one is afraid of the sun because of skin issues. Does anyone know some activities in these ports that these people will enjoy? I appreciate whatever help I can get!
