Tips for Gdansk sightseeing

We need advice from former cruisers to Gdansk, Poland. We will be in port on a Sunday in early July from 1200 to 8:00 at night. How religious are the Poles...will things be open in old town? In some European towns, everything is closed up tight on Sundays. Should we get a guide or can we just take a taxi to old town? Thanks for your input.
