Shore Excursions - level of difficulty rating

This is my first time cruising with Azamara and have found on other lines that the difficulty rating tends to be on the high (safe) side. I know this will be a difficult question (based on your own strengths etc) but for all you past AZ cruisers do you feel that the ratings fairly represent the difficulty/ease of the excursion. I ask this knowing what is strenuous for one may not be for another. I have ziplined, walked the Herculanean excavation site and rode the donkey up the mtn to Santorini (all were rated strenuous by the cruise line). I would have rated all but the Herculanean one moderate. The Herculanean was strenuous due to the heat, terrain and amt of walking but still doable. Can someone who has been on a strenuous rated excursion tell me how strenuous it was. Specifically I am interested in the jeep/camel caravan rated strenuous on the Quest at Sharm El Sheik. Any input would be really appreciated.
