Where's the best beach and why

It depends on what you want. Carlisle Bay has a ton of stuff to do, snorkeling with turtles and over shipwrecks. Its great!

Bathsheba is really cool with the mushroom rocks, not much for swimming, but there were surfers.

Folkestone is a great place to snorkel! There is a reef thing there so there are a lot of fish, not much of a beach though. It's a narrow beach, but you can rent chairs, there is a changing room and showers. There is also a very old church you can tour if you are interested in history, graveyard and park too.
