They're supposed to go under your seat or in your lap. There's also a bike storage area where you can put bags, but the bike riders don't like this when they board. Many people stack them in front of the foldable seats for handicapped people (aka the wheelchair bays.) This is obviously a poor and inconsiderate practice.
Chances are the train will be empty enough that it won't be an issue, but use common sense and be courteous, just as you would on any other big city transit system. If your bags are too big or too numerous, consider Uber or a cab.

We each had one large suitcase and a backpack. It was really easy to the Sheraton Seattle. I know some areas, you have to get off the light rail and then take a monorail to get to your hotel, but as far as the Sheraton goes, it was a breeze. There were signs everywhere in the airport to help you find the light rail. Once there, there are machines to buy your tickets ($3 per person). I think the airport is the first stop, so it's not crowded at all. The only are where it got a little tight was from Pioneer Square to Westlake, but that was only about 5 minutes of the ride. Everyone was friendly and helpful. We got off at the Westlake stop and walked up to street level. We could see the Sheraton from the street. It was about a block away. Super easy!
Thank you for the advice, I just reserved our hotel at the Sheraton.

We stayed at the Sheraton Seattle. We took the light link rail from the airport to the Westlake stop. It dropped us off about a block from the hotel and cost $3 per person. Then on the day of the cruise we took a pre-cruise city tour that dropped us off at the port and included transportation back to the airport after the cruise. It was $75 per person and WELL worth it. The tour was amazing and considering transportation from the pier back to the airport alone is usually around $40, I thought it was a good deal.
We are considering using the light rail. Was it an easy process? How many pieces of luggage did you have ?

We are a family of 5 and when we all cruise together we opt for two connecting cabins. The two bathrooms is a plus

The Uber & Lyft rides no longer pick up pax right in front of the terminal, which can get kinda crazy with cabs and private vehicles there, no to mention if you disembark late when new pax are arriving early, the number of cars increase.
Just ask any of the helpers outside the terminal where to catch a ride share car and they’ll point you in the direction. I think the shuttles in the number 1 & 2 bus slots, closest to the terminal give rides to the ride share area, which is good if you have all of your luggage. We only had our carry on bags so just walked.
Once in the rideshare area, we opened the app and followed the directions for ordering a car. They have a guy on the radio near where all the Uber/Lyft cars are parked who radios to the guy right in front of the pax tent who the car is for. That 2nd guy calls out “Ride for _____ (first name)” and you now know your car is in line so you watch for make/model/plate number, load up, and on your way.
Is this the same set up for pier 91 and 66?

Disembarkation.
They set the gangway at 6:00. The ship was cleared was cleared for self walk-off and complimentary Port Valet at 6:40. The Port Valet, which allows you to check overweight bags at no extra charge, was VERY popular.
Color tag bags which were suppose to be available starting at 8:00 am, we’re not available until 8:40.
There was a short line for Customs and they were only doing a passport check.
Shuttles to the airport cost $20 per person and leave frequently as soon as they fill a bus.
Did you book your shuttle to the airport prior to sailing?

If we need to change our reservation for a different date, will we lose the promos that were offered when originally booked? ( Port taxes included was the promo )

Do you mean when to get to the pier, or what boarding time to choose?
I personally wouldn't arrive at the pier any earlier than about 10am. The ships don't usually finish disembarkation much before 9:30 am, and the port buildings may not be open for new passengers until the ship is empty and the facilities turned around for embarkation. Even if you are able to enter and check in, you will face a lengthy wait in the port building until embarkation starts.
If you're asking about picking an embarkation time, I have to tell you it may not matter very much. NCL introduced this practice as a way to try and spread out the passengers arriving at the dock, the bulk of whom arrive in the 11am to 1pm time period. But they won't refuse you entry if you're there outside of your "embarkation time." Just choose a time that makes sense based on when you want to arrive at the pier.

I agree with staying in Anaheim for 2 nights. This way you can take full advantage of the park hours for your one day visit. Look into Super shuttle for your round trip transportation.
Best Western Park Place Inn is right at the cross walk to the Disneyland gates.We have stayed here ourselves.
I would opt for getting the park hopper so you can visit Disneyland and California Adventure!!

Just received an email from NCL - that our refund is being processed. We requested the refund on March 25th
