    Seamus, I like your approach.  It is not so much total terror but the health issues and not seeing land.  I think I will try to sneak in an Alaska cruise as a possibility since it is probably the best way to see the 49th state first time through and land is frequently visible.  My one challenge is since luxury cruises are going to be my splurge, I hate the idea of doing it on an Alaska run where I have been a few times land and sea.     I do think Alaska my be a good choice and as someone else suggested, a river cruise would be even better.  My Mom had been apprehensive about the same thing and ABSOLUTELY wouldn't fly.  When I suggested a cruise out of Baltimore and everyone else wanted to go, she relented.  So DH and I treated my Mom, Dad, and sister to a cruise on the Carnival Pride.  My Mom enojyed sitting out on the balcony and watching us go out or into port, then realized one time that she stayed out there well past when you could see land and didn't notice.  Also even before that, she was so busy on the ship, she didn't have time to think about it!

     

    Apparently, she did occasionally think about the fact that we sailed on 100 years, to the day, of the sinking of the Titanic! whoops!

    I had already bought the leeks for my soup.  now I need to use them in the next few days.

    I have a few pots of herbs in my sun room but the chives are nearly dead.  only the rosemary and parsley are thriving, the rest look so pitiful...

    Funny you should mention that.  I recently made gembotti…a vegetable medley…onions, peppers, celery, zucchini, yellow squash, mushrooms, fire roasted tomatoes, herbs, garlic, grated cheese and sautéed potatoes.  This is served with fresh Italian bread.  Then we take the leftovers and make up a beef stock…viola…gembotti soup!  Fantastico!  This is also great with raviolis in the soup.  Raviolis in broth (brodo) is a northern Italian tradition…served with grated Parmesan or Romano…mmm mmm good.

    Sounds pretty good.  I usually have to have meat in my soup, but perhaps with the ravioli, I wouldn't miss it as much.

     

  3. I miss having nice breakfasts.  I haven't been on a cruise yet where I saw anything impressive, unusual, or inspiring for breakfast even when they have great dinners

     

    I make a nice cheese souffle at home

    I make my eggs Benedict with a vinegar (as the acid instead of lemon) hollandaise and dress it up with green onions...usually toast the muffin too

     

    give me something different...maybe shakshuka  or just a decent breakfast skillet!

     

    eggs cooked  by them themselves with a side of meat cooked by itself and a stack of pancakes is not a cruise-worthy meal!

     

    Huevos rancheros is about the only attempt I ever see and it's usually mediocre at best...sigh

  4. well, I now have a new least favorite cruise!

    We went on the American Queen in September and the food and service in the dining room was abysmal.  The were very short staffed maybe because of COVID but I don't know for sure because they never talked to us an gave us any info.

     

    I would have to give the dining experience a 3 or 4!  I would probably give most McDonalds a 5 or 6!

     

    we stayed in New Orleans for 3 days afterwards and I would give most meals there a 9!  and these were not high end, expensive places...

    I never knew how alcohol I had in the house until we decided to hide it all when we thought someone getting out of rehab was going to stay with us!

     

    Besides three refrigerators, we also had stuff squirreled away in about 8 different places!

     

    now that we moved it back in the house, I'm trying to use up all the old stuff by making up my own cocktails.  This has only been moderately successful.

    Only the Caesar from our local Italian Rest.....can last for 2-3 days crispy.

     

    Now we had leftover salad greens from Sunday tonight, but they weren't dressed so they held up fine, just added onion, olives, Italian dressing, and fresh course ground black pepper.  I forgot to add cheese....sigh

    Frisch's Big Boy's Swiss Miss:  a burger on a dark rye bun with Swiss Cheese with Frisch's Tarter Sauce on both sides of the bun.  Add an order of their Onion Rings with the sandwich?  Very satisfying for me.  It's a treat for me because I don't patronize a Big Boy very often.  

    that's pretty close to a patty melt around here which I love...tartar sauce is the only outlier, I don't eat much of it because I'm not a big fish eater, but it's okay and I would think it could pair well with the sandwich.  And I love Onion rings which I almost got for lunch today...maybe tomorrow.
