Seeking Carnival's Black Bean Enchilada Recipe

Does anyone have this?? I can't find it anywhere. I didn't even realize you were allowed to ask for recipes on the cruise until a few minutes ago as I perused threads on this forum. Now I'm kicking myself for not thinking to do this on the cruise we took the first week of this month...argh.

It is my favorite entree and I would love to recreate it at home. I think the one I had on the Elation was better than the ones we were served on the Inspiration - but I'll take any Carnival ship's recipe for it, if you've got it.

OR...if you are planning a cruise on the Elation or any Carnival cruise anytime soon and remember to ask & bring it home for me, ohmygoodness, I would happily mail you some of my famous oatmeal chocolate chip cookies that people tell me I need to sell to a big chain and make millions off of.
