Swimming with stingrays excursion

Hello! My family of 4 will be on the Breeze sailing March 20. We're wanting to do Caye Caulker and swim with the rays and sharks while in Belize. I'm not such a fan of ship tours due to their large size, so I'd prefer an independent local company. I had read reviews about Belize Express Tours (aka King James, I believe) but it seems they might not be in business anymore? I tried booking with Coral Breeze Tours but they're already booked. We'd like to do an all-day trip, and want to be able to get lunch during the excursion (even if it costs extra). Any advice? We'll be docked from 8 am-5 pm.
