We were on Diamond and I don't think the restaurants are open when you board at noon. The doors are open, but I dont think the maitre 'd is there. We made a reservation for 2 for all 7 nights immediately upon boarding. When you get to the restaurant they are very accommodating if you want a particular table. We always wanted a table by the window and we usually got one or at least one row over from the window. If you book at 5:30 or late (like 9:00) you can probably get whatever table you want. I would imagine that people who have 5:30 reservations would leave around 7 - 7:15 so make your reservations immediately upon boarding for every night and then get there a little early when tables are clearing and you should get what you want. Figure an hour and a half for dinner, minimum.
