Timezones?

I am getting ready to book shore excursions with local vendors; specifically on Grand Cayman and in Aruba, but am confused on what time zone they may be in versus the times listed at in the cruise brochure for arrival/departure time. The ship leaves Ft. Lauderdale,so assume that the times listed in the brochure are eastern time, but do not know how that corresponds to the times listed on the web pages of the vendors showing their "local" time. The cruise is in October/November if that makes any difference.

Guess I should have looked around a little more before posting my question. In case you are interested, the ship (Celebrity Summit in this case) changes their times listed to match local time.
