finding our favourite waiter....

Not before you board probably. Once on board go to see the MD who is always in the dining room on embarkation day juggling table bookings. Ask if he or she can get you to a table served by your waiter, crossing his hand with apropriate pieces of silver of course.

However, as you say, the waiter may not still be there.

Depends when your previous cruise was.

We had an excellent cabin steward on Arcadia in 2005. We met him again on Aurora in 2008. He was in the same corridor but one block of cabins removed :(

Luck of the draw.

Best you can hope for is to recognise someone from cruise to cruise and then you might get a little more attention as they like being recognised too.

Aren't they on 9 month contracts/ 3 months off?

Then they have to apply for a ship again. I saw my fav waiter from Arcadia 2 years later on Ventura, asked him what he thought of Ventura at breakfast when i saw him and he said 'no mercy!'

Surely each waiter has his own tables section, and even if he is on that ship, he can't moved to your table just because you like him, or you to his tables...?
