Is it possible to be assigned an upgrade even if you already have a room assigned, as in not a guarantee? When I booked I think we got upgraded a floor or something, but is it ever possible to get there and have even more of an upgrade than the room you were originally assigned?

Not usually- typically if you want an upgrade, you should simply chose the higher category. The only time I got an upgrade was with an open room assignment- but an upgrade to one person may be different from what another person would want...keep an eye on the cruise rates- if they go down, in most cases, you can upgrade.
