Need info on "custom air"

My husband and I recently booked the April 11, Azamara transatlantic cruise which includes air and transfers from Orlando to Miami pre cruise and from Barcelona back to Orlando post cruise. We are elite level on Celebrity and are allowed "custom air." Has anyone used this perk? Does it mean that we can choose any flights we want and request that? If not, how does this work?
