Shore excursions in western itinerary

Hi all. hubby and I (and hopefully a few others) will be sailing the Legend Oct 2nd celebrating my big 5-0. We will be visiting Cayman, Cozumel, Roatan and Belize. There are a few things I have wanted to do for quite some time on previous cruises..but hubby not so. I think I can talk him into them for this special occasion. I am so wanting to horseback ride along the beach..in the water. Do any of these ports provide this? I would also love to parasail...which I could do right here where I live..southwest FL. but it would be nice in the caribbean. And I would like to snorkel ..which I know I can do at any ports..but which port would be the best?

Also, I would love to visit Rum Point in Cayman. What would be the best way to get there and is it really worth the visit?

I have searched a little on the ports of call board but it's more difficult to find what I am looking for.

Thank you for any advice offered. I have learned SO much through these boards.
