Book excursion now or while on ship?

Going to Ensenada and was wondering if it's better to book the shore excursions now or while on ship? Also, was wanting to do the wine tour and looking for any feedback on it.

You may want to book the tour now. This way you have a spot reserved. If you wait and they sell out, then you are going to kick yourself for not doing it earlier.

You can always cancel before the tour in case you are no longer interested. Make sure you check on the cancellation policy. Some cruise lines request a 24 hour cancellation notice while others require a longer notification.
