How many midnight buffets on a Carnival cruise?

You should have food each night. Most nights, it'll be about 20 items [sandwiches/casseroles/veggies/fruit/desserts] on the back of the Lido Deck. They only go "whole hog" [ice carvings and such] once each cruise

On the Miracle in April, there was one Gala midnight buffet with the ice carvings and extravagant desserts. IMO, this buffet is better suited for picture taking than eating.

 

On the other nights, there was (what was called) a late night snack available on the Lido deck from around 11:30pm to 1:30am. There were usually wings, fruit, cheese, desserts, and a few other items that varied each night (like beef, chicken, fish (i.e. grilled salmon), and side dishes). Also, remember that pizza and soft serve ice cream are available 24 hours.
