Grand Cayman Excursions

We'll be taking a Princess cruise to the Grand Caymans. We've already done the Stingray City and the Atlantis Submarine excursions. Does anyone have any suggestions of a good excursion, especially with a private excursion company versus through the cruise line?

When we were there last January we went to the turtle farm (through the cruiseline). I loved the turtle farm!!!

 

From what I've read it's very easy to catch the local bus to get there. I love Grand Cayman just to wander around, enjoy a few drinks at Margaritaville and some Nacho's!!
