Is there anywhere on the RCCL website (when I go into my reservation) where I would be able to see onboard credits applied (like those from future cruise booking, or shareholders credit)?

No, the website does not show OBC.

 

Contact whoever booked your cruise and ask for Royal's Guest Copy of your booking confirmation. That will show the OBC, and is also good to take on the cruise if there's a problem with OBC showing up on your account.
