Non beach excursions with a toddler?

We will be in Cozumel in February with our 3 year old son. He is an adventurous guy and I've been trying to find some fun options that are not simply a beach day (though Playa Mia looks very fun!). Most of the excursions both on our boat (Liberty) and private seem to have age restrictions he does not meet. I am open to booking privately and trying something new. Anyone have suggestions?

Curious to hear what you ended up doing? My wife and I will be in Cozumel in a few weeks with our 3 year old daughter and 14 month old son plus my in-laws? I'm thinking that one of the beach resort days makes the most sense but want to hear what other options there are.
