Stingray City and Dickenson

We are considering booking the 8:30am Stingray tour that Celebrity offers at $70pp, includes transp. It says the excursion is 3 hours. We'd also like to see Dickenson Bay Beach, have lunch and stay an hour or so before heading back to ship (maybe a stop in town for shopping, Sarah Fullers Pottery?). Question....

1. Will we have enough time? Does 3 hours mean from ship to ship, start to finish? Not sure of distances, terrain, roads, etc.

2. Will we have to hire our own cab from Stingray City to do this, and do we just not take the Celebrity round trip driver back? Maybe others on tour want to do same and driver will make stop? Or maybe just take Celebrity ride back to ship and then get cab to Dickenson that way?

3. should we just hire Antigua VIP Tours to do the whole thing? Read they are very good and can customize.

4. By the way, any lunch spot on Dickenson a must do? We like flip flop open air on the beach type places with cold beer! :)

Thanks!
