From the Latitudes Rewards

 

Entertainment can be pre-booked 26 days prior to sailing for Platinum and above members. For Platinum, Diamond and Sapphire members, dining can be pre-booked 125 days prior to sailing and for Ambassadors, dining can be pre-booked 130 days prior to sailing. Shore excursions can be pre-booked typically 1 year prior to sailing for Platinum and above members.

 

120 days for those lower to book dining.

Entertainment opens 21 days before sailing.

Shore excursions are whenever they are listed for your cruise (log on to your NCL account and go to "Explore and Plan". You can select each port so you can peruse the tours for each, one at a time.

Note that if you search early, not all tours may have been set up. Most of mine (for next month) showed up between 3 and 4 months out.
