Time ship pulls out

Hi fellow cruisers,

My family and I will be visiting George Town, Grand Cayman on June 13, 2006. I know that they are 1 hour behind us, so since the ship pulls out at 6:00 p.m, will be on Grand Cayman's time at 6:00 or our time, which would be 7:00? Thanks in advance for the answer.
