Best Mode of Transportation?

We are planning a trip for the beginning of January and want to sightsee Cayman. Neither of us are big shoppers, but we would definately like to visit Hell and the surrounding areas. What's the best way to do this? Should we rent a car or get a taxi? I was thinking it would be pretty fun to drive on the left side of the road. Also, is it recommended in general to book through the cruise line or independently in case we don't end up being able to visit that island? Thanks!!!
