We are also doing this cruise in March. When you go to make reservations they will have the regular dining room menus available and you can check out which night you like least, Caribbean Night seems popular

The 11 day Panama will have 2 formal nites, we tend to always do one formal and do Chops or Portifino the nite of the second one. Caribbean nite or lobster nite is our other choice, the lobster is ok but it isn't what we are use to having at home. The Brilliance is a great ship and the canal is pretty impressive.
