I did the Kenai Explorer landtour in 2005 and stayed at the Fairbanks, Denali. McKinley, and Kenai lodges. Since this was not an escorted tour, I can't tell you anything about how the included meals work. I assume that the meals are provided at the lodge restaurants or possible onboard the train.

 

At each lodge, there are generally at least 2 places to eat dinner: a nice meal in the lodge restaurant or casual food in the bar area. As I remember, Denali and McKinley had pizza also. For breakfast at Denali, I just grabbed a muffin and coffee at breakfast, but I remember the other lodges had breakfast buffets. All in all, the food is very good.

 

We had the option of eating breakfast on the train from Fairbanks to Denali. It was priced about the same as eating at the lodge. The dining area of the car is smaller than the upper seating area, so it can take a while to get to eat onboard.

 

The dress code is very casual with jeans everywhere, including the lodge dining rooms.
