what are the approx casino hours on the destiny?...more specifically when do they close?

There is no official closing time on any of the ships. On the Celebration we would stay until closing every night, usually between 2-4am, it all depends on how many people are still playing.

 

The opening times are listed in your Capers each day, table games open 30 minutes to 1 hour after the slots.
