Boat Drill & Open Seating Closing Time

We are sailing out of Buenos Aires @ I think at 10 pm. I am looking for the closing time of open seating for dinner & the time of the Boat Drill. What we need to do is program our Martini Drinking into these events. We are flexible, but we need one hour of drinking time, then on to dinner and then life jacket time. Are all of these activities doable? We leave for BA in just two days, for eight nights b/4 the cruise in BA. The cruise will start on Feb 15th.
