We have reserved the first meal online when originally booking but do we have to wait until on the ship to book the remainder?

Yes. After you board, you will notice little kiosks set up aroung the ship and entrance to the buffet, make all of your other reservations then. Try to do it before you eat as the times/restaurants/days might book up.
