Booking Excursions at the pier

We're doing the 7 day Society islands and I just read on another board that you can book independent tours at the pier- we're looking for island tours by locals- specifically in Bora-Bora and Moorea. Has anyone done this- What was your experience. Should I stick to the 'plan' and book with recommended operators or through the ship?
