I haven't left my car there for the duration of a cruise but I have left my car there while staying in the hotel for vacation. Like ssb said, call and ask. They have covered parking and surface parking as they have a convention center attached. They may not allow you to leave it there if they have a big event planned for the week of the cruise.

Hobby was recently completely redone inside and it's not as bad as you're thinking. It's now servicing international flights. But I wouldn't want to spend that much time in any airport so I get what you're saying.
There is a ton to do in Galveston very close to the port. Walking up and down the Strand with shops and restaurants is fun and you can control how much time you spend there.

There's tons to see, do, and eat in Galveston. It was a tourist town long before the cruise ships.
