Fly into Perth.
Take the Indian Pacific luxury train straight across the country to Sydney over 4-5 days (google that one), then cruise to NZL (and possibly back to SYD) over 10-14 nights.

Ah, I have sentimental reasons for the Four Seasons. I met my wife there 30something years ago when it was the Regent.

The "flattest" are certainly the Four Seasons, Sydney Harbour Marriott (there are a few Marriotts in Sydney) and the Pullman Quay Grand (pretty much directly opposite where the ships dock across the quay, very close to the Opera house)
