Choir of Man, does it ever sellout?

Tossing around pre- booking Choir of Man for our upcoming Escape cruise, but does it ever really sellout? I know that if I really want to see it, I should just pre book, if I do, I'm I " held" to that date or can I switch to another night if it's available.
