I remember there being sushi set up between 5-7 each night on a deck.

They would offer different sushi each night.

No. The Sunshine has its own Sushi restaurant for an up charge but the Taste Bar has replaced the Sushi.

No, it has been replaced by the taste bar. Some ships have Bonsai Sushi, which is very good, but not free.

We loved the Taste Bar! Each night it offered samples from some of the restaurants/bars even if the restaurants were't on that ship.

Sadly, they took away the sushi, made a Sushi restaurant for an upcharge. I saw very few people in there. The taste bar gives little samples of foods from their specialty restaurants, but no real utensils. Try eating pulled pork with a toothpick.
