Time frame for booking tour excursions

Our family will be taking our first cruise on Celebrity later this summer and I was pleased to find late last week that the Celebrity site had a downloadable document of tours/excursions available for our Med cruise. I thought it was a good document with very descriptive info especially helpful to someone not familiar with how Celebrity does things.

 

However, we selected some tours we'd like to do and I went onto the site today, added my confirmation number and although the brochure was still available, there was a message that excursions for this cruise weren't available yet (or something like that).

 

Am wondering from those of you who have cruised with them before, how far out from a cruise date are you usually able to actually book and pay for the excursions you want. Also, how far out can you book reservations at the specialty restaurants?

 

Would appreciate your advice.
